Broccoli bread

Ingredients

  • 300g of broccoli included stems and leale
  • 150g of toast bread  (or any soft bread)
  • 50-100 g of leftover cheeses
  • 2 eggs
  • 1 glass of milk
  • salt and pepper

Preparation

Boil the broccoli for a few minutes in salted water, after cutting the stems in small cubes.

Cut also the bread in small cubes.

Spread with butter and flour a cake mold and lay a first layer of bread. Lay a layer of broccoli, one of mixed grated cheeses and finish with one layer of bread.

Aside, beat the eggs with a fork and add milk, salt and pepper. Sprinkle with the dough the layers and press with a spoon, to let the liquid get in the bread and in the broccoli. Dust with some grated cheese and oven at 180°-200° celsius for 15-20 m until it looks like a solid bread.

Take it out of the oven and serve sliced: it goes very well with a vegetables soup or cream.
