- 2 or 3 zucchini
- Leftover mashed potatoes
- Canned Tuna fish
- 1 egg
- Grated stale bread
- 1 tablespoon of Parmesan Cheese
- Salt and pepper
Slice and grill the zucchini. In a bowl, mix the leftover mashed potatoes with the egg, the Parmesan Cheese and Tuna fish. Add grated bread enough to stiffen the mixture. Adjust with salt, pepper and your favourite seasoning (thyme, marjorane, parsley).
Now, form the rolls: spread on each slice of grilled zucchini a tablespoon of the mixture; roll it and close with a toothpick. Put the rolls in an casserole dish greased with oil; sprinkle with grated bread and some minced parsley. Finish with a little oil and put in warm oven (200° Celsius) for 10 minutes, until the rolls are crispy and brownish.
