Ingredients
- Leftover trimmings of turkey or chicken raw meat
- 1 or 2 eggs
- 1 or 2 stale bread buns
- 4 spoons of grated cheese
- Salt and pepper
- Parsley
- Sparkling water
For the sauce
- Onion
- Cellery
- Carrot
- Canned tomato
- Oil
- Fresh basil leaves
Chop the meat in the mixer (if you have some leftover sausage you can use it). Grate bread and cheese. Mix meat, cheese, bread, parsley, eggs , salt and pepper using sparking water to make a soft compound. Form the meat balls, in the size you prefer.
Meanwhile, chop carrot, celery and onion and fry in a casserole with some oil. Add the canned tomato and some water. Bring to boil and toss in the sauce the meat balls (first rolled in flavour ) . After the sauce has resumed boiling, cover with a lid and let cook for half an hour until the sauce gets thick. Serve with some fresh basil leaves and a little olive oil.
